Cheese whey is defined as watery part of milk separated from coagulated part or curd in the process of cheese making. Utilization or disposal of this by-product, is still a serious problem in most parts of the world. In Egypt, substantial amounts of whey and milk permeate are produced as cheese production utilizes more than 70% of the raw milk being produced in the country. At the same time, the economic and environmental costs for handling these by-products are of increasing concern for dairy industry.
